  • Maida – 3/4cup
  • Besan – 1 cup + 2 Tbsp
  • Powdered sugar – 1 cup
  • Semolina (sooji) – 2 tsp
  • Ghee – 1 cup
  • Vanilla essence – 1 tsp
  • Milk for Brushing {optional}

Method:

  • Whisk ghee and powdered sugar for 5 to 6 minutes
  • Add sooji, maida, besan and vanilla essence to make a dough
  • Make lemon-sized balls with your hands
  • Pat the balls to flatten a bit and prick a couple of times on the top with a fork
  • Brush some milk over these biscuits. You can even press in some dry fruits on top
  • Place these biscuits in greased idli stand
  • Place the idli stand in a preheated pressure cooker and put on the lid
  • Let it cook for about 17-18 minutes
  • Check if the lowermost layer of biscuits are ready, i.e., if they appear brownish. If yes, remove these and let the rest bake until brown
  • Once all biscuits are removed, place them on a wire rack to cool completely.
  • Store in an airtight jar

  • Whole milk – 3 Tbsp
  • Salted butter – 6 tbsp
  • Sugar – 4-5 tsp (to make caramel)
  • Shredded coconut – 4 cups
  • Melting chocolate – 1 cup
  • Sea salt to taste

Method:

  • To make the caramel, in a non-stick pan, melt sugar until dark golden brown. Let it cool until hardened and set aside. Chop and crumble this caramel into tiny bits
  • Put the caramel, milk and butter in a large pan over medium heat. Keep stirring until everything melts but make sure not to let it boil
  • When the caramel mixture is smooth, add coconut. Mix well until it is completely coated with caramel. Add more coconut if you think the mix is too runny. The mixture should not be too wet
  • Dollop out spoonfuls of the mix onto parchment paper in a dish.
  • Allow to cool down completely
  • In another pan, melt the chocolate in a double boiler
  • Dip the bottoms of the cooled cookies in this chocolate and place back on the paper to dry
  • Drizzle some more chocolate and sprinkle with some sea salt
  • Allow the cookies to completely firm-up
  • Store at room temperature in a cookie jar that’s airtight

  • Sugar – 2 cups
  • Milk – ½ cup

Method:

  • In a saucepan, stir well the milk, sugar, butter and cocoa powder, over medium heat.
  • Keep stirring well until the sugar dissolves completely and the mixture comes to a boil.
  • Remove from the heat.
  • Add peanut butter and vanilla essence to this mixture and mix well.
  • Add in the oats and stir to coat them thoroughly.
  • Spoon this mixture onto a sheet of baking paper. Keep it aside until the mix firms up. This should take approximately 15-20 minutes.
  • Remove and store in an airtight jar

  • 1 cup chilled sweet potato puree
  • 3/4 cup chilled buttermilk
  • 2 1/4 cups all-purpose flour
  • Two tablespoons light brown sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • One teaspoon kosher salt
  • One stick cold unsalted butter, cut into cubes, plus one tablespoon melted butter, for brushing

Method:

  • Preheat the oven to 450°. Line a baking sheet with parchment paper
  • In a small bowl, whisk the sweet potato puree with the buttermilk. In a large bowl, whisk the flour with the brown sugar, baking powder, baking soda and salt
  • Sprinkle the cubed butter over the dry ingredients; using a pastry blender or two table knives, cut the butter into the flour until the mixture resembles very coarse crumbs, with some of the butter about the size of peas
  • Stir in the sweet potato mixture just until a soft dough forms
  • Turn the dough out onto a floured work surface and pat it into a 1-inch-thick round
  • Using a 2-inch round biscuit cutter, stamp out as many biscuits as you can. Gently press the scraps together and stamp out more biscuits. Arrange the biscuits on the prepared baking sheet and bake for about 15 minutes, until golden brown. Brush with the melted butter and serve warm

  • 100g Plain White Flour

  • 75g Proper Nutty Peanut Butter
  • Egg Yolk

Method:

  • Preheat the oven to 180°C/fan oven 160°C, 350F/Gas 4. Line a baking sheet with baking paper
  • Place the flour, sweetener, peanut butter, egg yolk and butter into a large bowl and mix until combined to a smooth dough. This could be done in a food processor
  • With lightly floured hands, break off evenly sized pieces of the dough and roll into walnut-sized balls
  • Place the dough balls onto a baking sheet and gently press each ball with the back of a fork to flatten slightly and make a slight imprint on to the dough
  • Bake for ten minutes, or until just turning golden brown. Transfer the cookies to a wire rack and allow to cool

Method:

  • Preheat the oven to 180°C/ 160°C (fan)
  • In a large bowl cream together sweetener, butter and sugar. Add in the honey, egg and vanilla extract and beat again until smooth
  • In a second bowl mix together the flour, bicarbonate of soda, cinnamon and salt
  • Add the dry ingredients into the creamed mixture, mixing thoroughly until combined
  • Stir in the oats and blueberries gently until just combined
  • Roll tablespoons of the mixture into round balls and place onto a greased baking sheet, gently pressing down in the centre to flatten slightly
  • Baker for 10 mins or until the edges are golden. Remove and rest for 5 mins before transferring to a wire rack to cool before enjoying
