Mix the four different types of cheese in a giant bowl and set aside. Melt the butter on a hot pan and spread it evenly with the help of a brush. Soak urad dal and the methi seeds in a bowl, and in a separate bowl, soak idli rice for at least 7 hours.  Drain the water and grind the dal, methi, salt and rice separately. Once both mixtures are ground, mix them. The batter should have a thick but pourable consistency. Set the batter aside to ferment for at least 12-14 hours in a warm place. To cook the idlis, place an idli cooker with water on a high flame to bring the water to boil. Grease the idli plates with oil and pour the batter on them. Place the stand inside the cooker and cover and steam for 10 minutes. Once cooked, remove the idli stand from the cooker and spoon out the hot and fluffy idlis. Serve it with chutney or sambhar.

3. Choco-chip cookies

Preheat oven to 175 C. Melt the butter and cool it. In a large mixing bowl, add the butter and sugar and mix well. Incorporate the vanilla and egg into the mixture. Add in the dry ingredients (the flour, baking soda and salt). Mix the dough until well combined. Bring a large pot of salted water to a boil. Cook the spaghetti as per the packet instructions and drain and keep aside. Cardamom powder, ½ tsp
