1. Caprese Chicken Pasta

INGREDIENTS

  • Balsamic vinegar
  • Sugar
  • Honey
  • Boneless Skinless Chicken Breast
  • Italian seasoning
  • Garlic powder
  • Salt
  • Black pepper
  • Extra-virgin olive oil
  • Penne or spiral pasta noodles
  • Cherry tomatoes
  • Fresh mozzarella

DIRECTIONS

  • Take a medium saucepan. Add balsamic vinegar, sugar, and honey to the pan and whisk them properly. Bring to a boil on medium flame, then reduce heat and simmer until reduced by half. Remove from heat and transfer to a heatproof bowl and let it cool.
  • Meanwhile, take two tbs oil in a large skillet on medium flame, add chicken and cook until warm. Remove from skillet and keep aside.
  • Add cooked pasta to skillet. Season with one tbs Italian seasoning, salt, and pepper and stir to mix well. Add cherry tomatoes—Cook for 2 to 4 minutes.
  • Add chicken and mozzarella, then cover and cook until the cheese melts. Drizzle with balsamic glaze, and it’s ready to be served.

2. Homemade Pizza

Who doesn’t love pizza? Make this super easy pizza and share it with your valentine.

INGREDIENTS
For the Dough

  • Cooking spray
  • Lukewarm water
  • Granulated sugar
  • Packet active dry yeast
  • All-purpose flour
  • Salt
  • Extra-virgin olive oil

For the Pizza

  • Corn flour
  • Marinara sauce
  • Fresh mozzarella
  • Fresh basil leaves
  • Extra-virgin olive oil
  • Pinch red pepper flakes

DIRECTIONS

  • Add water and sugar in a small bowl and stir to dissolve, then sprinkle over the yeast and let sit for about 8 minutes.
  • Take a large bowl, add flour, salt, and oil. Pour in yeast mixture, then mix with a wooden spoon until everything is combined correctly and a dough begins to form. Knead against sides of bowl until the dough starts to come together, then put it on a solid surface and knead. Add flour if needed, until it feels elastic. Make a tight ball out of the dough you have prepared. Take a large bowl, apply cooking spray on it and place the dough ball into this pan. Cover the bowl with a clean dishtowel. Let it rest for some time.
  • Gently punch down dough, then divide in 2, and roll into balls. Let dough balls rest as you preheat the oven to 500° and grease a large baking sheet with olive oil. Sprinkle two tbs cornflour all over.
  • Now begin to gently flatten one ball of dough and roll with a rolling pin or stretch with your hands until it’s about 12” in diameter. Make it as thin as you can. Carefully transfer to a prepared baking sheet and brush dough all over with oil. Then, add your 1/2 cup Marinara sauce to the middle of the dough and spread outwards with a spoon or ladle, leaving about 1” for the crust. Top with thinly sliced mozzarella. Bake until crust is golden and cheese is melty or for 15 minutes.
  • Top with fresh basil leaves, a drizzle of olive oil, and red pepper flakes.
  • Repeat with the remaining dough and toppings for the second pizza.

3. Creamy Tuscan Chicken

INGREDIENTS

  • Extra-virgin olive oil
  • Boneless chicken breasts
  • Salt
  • Black pepper
  • Dried oregano
  • Butter
  • Minced cloves and garlic
  • Cherry tomatoes
  • Baby spinach
  • Heavy cream
  • Freshly grated cheese
  • Lemon wedges, for serving.

DIRECTIONS

  • Heat oil in a skillet on medium flame. Add chicken and season with salt, pepper, and oregano.
  • Cook until golden and no longer pink, approximately 8 minutes per side. Remove from skillet and set aside.
  • Now melt butter in the same skillet on medium flame. Stir in garlic and cook until fragrant. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook till spinach is starting to wilt.
  • Stir in heavy cream and cheese and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced or for about 3 minutes. Return chicken to skillet and cook until heated for 5 to 7 minutes.
  • Serve with lemon wedges.

4. Lemon Garlic Shrimp

Lemon, garlic, and shrimp – an unbeatable combination for your lovely evening at home.

INGREDIENTS

  • Butter
  • Extra-virgin olive oil
  • Peeled and deveined medium shrimp
  • Lemon, thinly sliced, plus juice of 1 lemon
  • Minced cloves and garlic
  • Crushed red pepper flakes
  • Salt
  • Dry white wine or water
  • Freshly chopped parsley for garnishing

DIRECTIONS

  • Melt one tablespoon butter and olive oil in a large skillet on medium heat. Add shrimp, lemon slices, garlic, and crushed red pepper flakes, and season with salt.
  • Cook until shrimp is pink and opaque or for about 3 minutes per side.
  • Remove from heat and stir in remaining butter, lemon juice, and white wine/water. Season with salt and don’t forget to garnish with parsley before serving.

5. Zucchini Lattice Lasagna

INGREDIENTS

  • Ricotta
  • Freshly grated cheese
  • Large eggs
  • Salt
  • Black pepper
  • Marinara sauce
  • Large zucchini, cut into wide strips using a y peeler and drained on paper towels.
  • Shredded mozzarella

DIRECTIONS

  • First things first, preheat oven to 350°.
  • In a small bowl, stir together ricotta, cheese, and eggs and season the ricotta mixture with salt and pepper.
  • Spread a thin layer of marinara cheese in a baking dish. Make two layers of zucchini noodles, ricotta mixture, and mozzarella.
  • For the final layer, make a zucchini lattice—layer zucchini noodles side by side at a diagonal in the baking dish. Lift the bottom half of every other noodle and lay another zucchini noodle across diagonally. Repeat until the top layer is complete.
  • Sprinkle with more cheese and season with salt and pepper.
  • Bake until cheese is melty and zucchini is cooked through or for 30 minutes.
  • Let it rest for 10 minutes before slicing.
